Soft and tasty cake with Vegan and Gluten Free Bronte Pistachio DOP

Ingredients (18cm mold):

-110g of rice flour
-50g of coconut flour
-80g of soy yogurt (or low-fat)
-200g of vegetable milk (or normal)
-100g of pistachio paste @dontanu_pistacchiodop
-110g of erythritol or other sweetener
-10g of yeast

Method:

-Put the milk and the pistachio paste in a saucepan, then mix over medium heat until the paste is blended with the milk.
-Put the flours and yeast in a bowl, then add the yogurt, erythritol and the now warmed milk and mix with a whisk until smooth.
-Bake in the oven for 30 min at 180 degrees (always do the toothpick test) or in the microwave at 750w for 8 minutes.
-Decorate with pistachio cream and chopped pistachios Don Tanu pistachio DOP.
